This is what happens when you run out of all the vegetables you actually want to eat, and can’t justify spending $9 for a miniature jug of arborio rice. While brown rice isn’t the most desirable choice, it’s typically the healthiest; and I had about 3 lbs of it on hand. I also had recently inherited a very large bag of frozen mixed vegetables that was clogging up my freezer.
Basically all I did was follow a typical risotto recipe but switched out the rice, added some garlic, and ixnayed the butter. I also pureed some peas to mush and added them at the beginning in attempt to make the rice ‘pea-infused.’ It didn’t really work, but I did have some funky gleaming green risotto for about 20 minutes in case you’re looking for some healthy tricks to play on the kiddies this Easter. Risotto is a very good dish that’s quite flexible so use your imagination and throw all sorts of veggies in it. Some other versions I’ve tried include: butternut squash, green peas, mushrooms, artichokes, asparagus, tofu.
Brown rice risotto:
1 1/2 C brown rice
28-29 oz veggie broth (use chicken if you’re not a veggie)
2 1/2 C H2O
3 garlic cloves
smidgen of olive oil to saute
1 small onion, diced
1/2 C white wine
a few tsp or more of your choice seasonings (oregano, basil, thyme, etc.)
1 tsp salt and 1/4 tsp pepper (or to taste)
Combine veggie broth and H2O in a sauce pan and put over low heat so it stays warm.
In a large pot or skillet saute onion in olive oil until it begins to soften. Add garlic and saute a minute more. Add rice and cook over medium heat for about 5 minutes. Add wine and seasonings and cook until wine is mostly absorbed. Add a cup of broth mixture to rice. You may need to reduce the heat slightly. Wait until the broth is mostly absorbed before adding more. Continue this way until all the broth has been added to the pan. Typical arborio rice only takes about 30 minutes to prepare by the brown rice took over an hour.
Depending on what veggies you add to the risotto the time at which you need to add them will vary. I added the veggies to about half way through the cooking time, but it’s likely feasible that they could be added closer towards the end.
